Whether you’ve got guests to impress or you simply fancy treating yourself, having a bank of quick and tasty dishes in your arsenal is a must. Vegan recipes don’t have to be complicated to follow or expensive, as the following will prove!
1. Chickpea vegan ‘meatballs’
Ingredients:
- 1 can of chickpeas
- 1 large potato
- 1 Tablespoon of breadcrumbs
- Oil
- Salt
- Pepper
Instructions:
Boil the large potato, peel it and cut it in small squares.
To a food processor, add all the chickpeas, the potato, oil, salt, and pepper and blend until the mixture is smooth. Add the mix to a large bowl and stir through the breadcrumbs. Keep mixing until you can start forming the mixture into balls. Cook the ‘meatballs‘ in the oven for 30 minutes at 200°C, flipping them halfway.
Serve with a few different dips and easy sides, such as salad, fries and garlic bread. This is one of those cheap vegan recipes that works for every occasion.
2. Mushroom risotto
Ingredients:
- Handful of mushrooms (you can choose the variety)
- 80g arborio rice
- Vegetable broth
- 1/4 onion
- Oil
- Salt
- Pepper
Instructions:
Start by finely chopping the onion. To a pan, add the oil and the onion and cook until lightly browned. Add the mushrooms and cook for 4-5 minutes. Add the rice and stir for one minute, until it becomes transparent. At this point add one or two ladles of broth and cook the rice for 15/20 minutes. Once the broth has completely evaporated, add one or two more ladles of broth. Repeat until the rice is cooked through and the sauce is thick and creamy.
If you’re serving with wine, choose a vegan-friendly white.
3. Pea puree pasta
Ingredients:
- 300g peas
- Garlic
- Pasta
- Olive oil
- Handful almonds
- Cherry tomatoes (optional)
Instructions:
Gently cook the peas in a pan with oil and garlic. In a food processor, blitz the almonds until reduced to a flour-like consistency, before adding the peas and blending until everything is smooth. Add salt and pepper to taste. Cook the pasta and transfer to a large bowl before stirring in the pea puree. Add some chopped cherry tomatoes to serve. Vegan recipes don’t get much simpler than this one.
