3 Effortless Vegan Recipes Sure To Impress For Under £5 Each

1. Chickpeas “meatballs”

Ingredients: 

  • 1 can of chickpeas
  • 1 large potato 
  • 1 Tablespoon of breadcrumbs 
  • Oil 
  • Salt 
  • Pepper 

Process: 

Boil the large potato, peel it and cut it in small squares. 

To a food processor, add all the chickpeas, the potato, oil, salt, and pepper, and blend until the mix is smooth. Add the mix to a large bowl and add the breadcrumbs. Mix well until you can start making some balls. Cook the “meatballs” in the oven for 30 minutes at 200°C. Flip them halfway. 

2. Mushrooms risotto 

Ingredients

  • a handful of mushrooms
  • 80 g arborio rice 
  • Vegetable broth 
  • 1/4 onion 
  • Oil 
  • Salt 
  • Pepper 

Process: 

Start by finely chop the onion. To a pan, add the oil and the onion and let it cook until it is lightly brown. Add the mushrooms and cook them for 4/5 minutes. Add the rice and stir it in the pan for one minute until it becomes transparent. At this point add one or two ladles of broth and cook the rice for 15/20 minutes. Once the broth has completely evaporated, add one or two more ladles of broth.

3. Peas pure pasta   

Ingredients: 

  • 300 g peas
  • Garlic 
  • Pasta 
  • Olive oil 
  • Almonds 
  • Cherry tomatoes (optional)

Process : 

Cook the peas in a pan with oil and garlic. In a food processor, blend the almond until reduced to a flour consistency, add the peas and mix until everything is smooth. Any salt and pepper. Cook the pasta in a pot and drain it. In a large bowl, mix the pasta and the peas puree. Add some chopped cherry tomatoes on top.
