This month, popular vegan chef, Matthew Kenney, is set to open new vegan restaurants in Miami, Boston, Los Angeles and Peru. This will total his vegan restaurant empire to 57 venues. Plant Food + Wine will be opening in Miami and Lima, Peru; Latin American-inspired eatery Oleanda and pasta bar Sestina will be opening in Los Angeles. In addition, PlantPub will be opening a second location in Boston, Massachusetts.
Matthew Kenney partnerships
Following graduation from the French Culinary Institute, Kenney worked in several New York City kitchens before opening a number of his own vegan restaurants in New York as well as along the East Coast. He then expanded across the country and internationally.
This latest venture will see Kenney forming new partnerships such as with chef, Andre Patsias, for the opening of Plant Food + Wine in Lima. With local Peruvian cuisine and culture at the heart of all it serves, guests will be able to expect dishes such as Anticuchos Ostra which is grilled oyster mushrooms with anticuchera sauce, cassava charcoal and huancaina cream.
Each setting is designed thoughtfully, encouraging a peaceful yet vibrant atmosphere. Keeping with a theme of neutral earth tones, an open kitchen and lots of beautiful plants on show, the aim is for guests to relax and feel comfortable.
Kenney commented: “We’re thrilled to bring Plant Food + Wine to Lima; Peru is a beautiful country with a rich culinary heritage and fresh, nourishing ingredients.
“Our artistic vision has always been to create an upscale, memorable dining experience, where food is not only beautiful and delicious but also incredibly healing and nutritious.”
Vegan pub food comes to Boston
Matthew Kenney’s second PlantPub venue will be in Boston’s Fenway neighbourhood. It’s set to be much bigger than the flagship Cambridge location which was opened last autumn in partnership with chef, Mary Dumont, Pat McAuley and Sebastiano Cossia Castiglioni.
Guests will enjoy the lovely pub atmosphere and can expect similar dishes to those on the Cambridge menu, such as Buffalo cauliflower wings, pizzas, burgers, hot dogs and loaded nachos. However, the Fenway branch will host more of a ballpark theme to its menu due to the connection with Fenway Park and Boston Red Sox fans.
Honouring traditions
Latin American-inspired Oleada Cocina in Los Angeles will offer a menu featuring burritos, tacos, tostadas and many fantastic cocktails. Whilst in Century City in LA, Kenney will be launching his second SESTINA vegan pasta and wine bar.
Regarding this move, Kenney commented: “SESTINA offers a healthy, plant-based adaptation of universally-loved Italian classics, and the best pasta you will ever eat. Using the highest quality ingredients, honouring traditional styles—while constantly experimenting with new dishes—is what makes it unique, not just in the plant-based market, but the restaurant industry as a whole.”
